Chicken and Spinach Parmesan

We had this on Tuesday for dinner. Sorry I'm a little late posting!

I found this recipe on Pinterest a while back I and I wanted to test it out! It looked really complex but it was a special occasion, and it was worth it. Along this journey I'm learning new skills like blogging, photography, cooking, and more.

With this meal I learned how to properly slice the chicken in half (without slicing my hand in half!) and cook pasta. You know, "Cooking 101." it turned out really well and every one really liked it so I might make this again in the future.

Here's The Recipe!

This is adapted from Skinny Taste’s Chicken Rollatini with Spinach alla Parmigiana

Ingredients:

  • 5 large chicken breasts, sliced in half (longways)
  • 3/4 cup breadcrumbs
  • 1 tablespoon various dried Italian spices (oregano, basil. garlic powder, thyme, etc.,)
  • 1/2 cup grated parmesan cheese
  • 2 large eggs, beaten well
  • 10 oz frozen spinach, squeezed dry of excess liquid
  • 8 oz cream cheese
  • 12 oz mozzarella, shredded
  • non-stick spray 
  • 1 large can tomato sauce
  • salt and pepper to taste                                                         
  • 2 lbs. of your favorite pasta (I used Rotini)

Directions:

Wash and dry chicken, season with salt and pepper. Preheat oven to 450°. Lightly spray baking dish with non-stick cooking spray.

 
hannah's blog 840Combine breadcrumbs and spices with Parmesan cheese on a large plate or in shallow bowl. Beat eggs in a small, shallow bowl.

Combine cream cheese, mozzarella, and spinach and about 2 tablespoons of egg to the mix and stir well.

Lay chicken down on a cutting
hannah's blog 846board or other work surface and spread spinach mixture on the chicken and loosely roll each one.

Dip chicken in egg mixture quickly and then roll in the breadcrumbs and place seam side down in the baking dish.

hannah's blog 851Bake for 25 minutes; remove and top with sauce and additional mozzarella cheese.
 
Return to oven for an additional 5 minutes, or until cheese is melted.
 
 
Serve over your favorite pasta, and enjoy!
