Young Women In Excellence

I did this for my Knowledge project and I think that I’ve learned to appreciate what my older Sister Deborah does to help our family. I also feel less awkward chopping nuts, working with raw meat,  and over all I just feel more confident cooking. I had fun taking all the pictures of the food for my blog. and learning to make my favorite meals. I learned patience which is a biggie for me. I hope that someone can appreciate the recipes on my blog and have as much fun making them as I did.

I might keep posting every once in a while when it’s my turn to cook.

Chicken Divan



Chicken Divan is a simple family recipe that is easy to make. perfect for when you have to get out the door.

Skill level: Beginner 

 

  Ingredient's

  • 2-3 Chicken breasts, cooked and shredded
  • 1 pkg frozen broccoli
  • 1 can cream of chicken soup
  • 1 cup miracle whip light
  • 1-2 tsp curry powder
  • 1 cup cheddar cheese, shredded
  • milk (as needed)
Mix the chicken and broccoli in the bottom of a 9x13 pan. In a medium bowl, mix the rest of the ingredients, adding milk until it is a good consistency (maybe a couple tablespoons). pour sauce over chicken

Hello Dolly Bars

 

I’ve made these before so I didn’t really learn something new, I just got better. But they are amazing.

Skill level: Easy

 

                              Ingredients

  • 1/2 cup butter, melted
  • 1 1/2 cups graham cracker crumbs
  • 1 cup chocolate chips
  • 1 cup flaked coconut
  • 1 cup chopped walnuts (or pecans)
  • 1 can sweetened condensed milk

Melt the butter in 9”x13” pan in microwave. Sprinkle crumbs over butter.Layer coconut, walnuts, and chocolate chips. Evenly pour milk over bars. Bake at 350 F. for 30-35 minutes. cut into bars when cool.

Easy Chicken Pot Pie


For dinner I made Chicken Pot Pie and I am so very sorry I haven’t been posting, I’ve been out of town, I’ve been sick, My computer hasn’t been working and I’ve been busy with school. So my apologies.
Today I managed to burn myself on the oven roof, but I’m fine. I’m just going to be more cautious taking things out of the oven from now on.

Skill level: Easy

                          Ingredients

  •  3 chicken breasts
  • 1lb bag frozen peas and carrots
  • 1lb frozen hashbrowns (in cubed form)
  • 3 cans cream of chicken soup
  • 1 1/2 soup cans of milk
Mix the soup and milk in a small bowl. In an 11x15 pan, mix chicken, peas, carrots, and hashbrowns. Add soup mixture and combine. Make the crust. 

         Crust

  • 3 cups Bisquick
  • 3 eggs
  • 1 1/2 cups milk
Gently beat egg and combine with Bisquick and milk.

Spread over the top.Bake at 350 for 45 minutes or until golden brown on top and toothpick inserted comes out clean
.

General Conference Brunch

Who doesn't love General Conference? In our family we like to make it a special occasion. We have different activities for the younger ones, and we always do a big Brunch.

This Saturday morning we had homemade Monkey Bread and scrambled eggs. Full credit goes to my sister, Deborah, who woke up at 6:30 to make it, while I was still asleep. Monkey Bread has always had a way of bringing the sleepy kids to the table.

 

Monkey Bread

Ingredients

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 2 cans (16.3 oz each) biscuits
  • 1 cup firmly packed brown sugar
  • 3/4 cup butter or margarine, melted

Steps

  1. Heat oven to 350°F. Lightly grease 12-cup fluted tube pan with shortening or cooking spray. In large -storage plastic food bag, mix granulated sugar and cinnamon.
  2. Separate dough into 16 biscuits; cut each into quarters. Shake in bag to coat. Arrange in pan, adding walnuts and raisins among the biscuit pieces.
  3. In small bowl, mix brown sugar and butter; pour over biscuit pieces.
  4. Bake 28 to 32 minutes or until golden brown and no longer doughy in center. Cool in pan 10 minutes. Turn upside down onto serving plate; pull apart to serve. Serve warm.
(We 1 1/2 times-ed this to make 6 mini Bundt pans for everybody.)
On Sunday I did the brunch with the help of my mom. Our first attempt at the cinnamon roll dough was a BUST! It didn't rise so my mom came to the rescue and helped make a new batch. Kneading the dough was my favorite part. I haven't really made cinnamon rolls before but I am definitely making them again sometime! It’s a lot of fun. With this brunch I have learned some more new skills like telling if the dough is rising (the first batch was a flop), kneading, how to properly roll out the dough, and more!

Ingredients

  • 1 cup warm milk
  • 2 eggs room temperature 
  • 4 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 1/3 cup margarine, melted
  • 1/2 cup white  sugar
  • 2 1/2 teaspoons bread machine yeast 
  • 1 cup brown sugar packed
  • 2 1/2 tablespoons ground cinnamon
  • 1/3 cup butter, softened
  • 1 (3 ounce) package of cream cheese, softened
  • 1/4 cup butter. softened
  •   1 1/2 cup confectioner's sugar
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Steps


  1.   Dissolve the yeast in the warm milk in a large bowl, mix in the sugar, margarine, salt, and eggs add the flour and mix well.
  2. Knead the dough into a large ball, using your hands lightly dusted with flour. 
  3. Put in a bowl,  and cover and let rise in a warm place for about 1 hour, or until doubled in size.

  5. Spread dough with 1/3 cup butter  and evenly and brown sugar and cinnamon and any other toppings if you want.
  6. Roll up dough and cut into 12 rolls, place rolls in a lightly greased 9x13 pan or cookie sheet cover and let rise until nearly doubled in size, about 30 minutes while   photo c93e6b81-800c-4620-9764-42f61417e7b9_zpse51e0527.jpg  photo SAM_1077_zps5c64d67d.jpg                      they rise, preheat oven to 400 degrees F




  • bake in oven until golden brown, about 15 minutes. while the rolls are baking, beat together cream cheese,1/4 cup butter, confectioners sugar, vanilla extract 1/8 teaspoon salt. spread frosting over cinnamon rolls and serve warm.

    Golden Snitches

     

    I think that with this meal what really I’ve learned is patience. other than that I’ve just been working with skills I learned in the past month.

    I made Golden Snitches. It's a fast and easy dinner. It only took me so long because I am really really slow at shredding chicken.We make these for anything Harry Potter (September 1st, movie night, July 31st...)

    Skill level: beginner

                           Ingredient's

    •        2-3 boneless chicken breasts, cooked and shredded.
    •        1 8 oz package cream cheese, softened
    •        1 T finely chopped green onion
    •        2 cans crescent rolls
     
    combine chicken, cream cheese, and green onions. Separate roll dough and put a spoonful of mixture at the widest part of the triangle and roll up, forming a ball. Bake according to package directions until golden brown. Serve with side dish of choice.

    Beef Stroganoff

     

    Hey guy's! Tonight I made beef stroganoff and it's a favorite around this house. I've made it before when my sisters were at Girl’s Camp but this time I used ground beef which I have never worked with before, but it was good.

    With this recipe I learned how to work with ground beef and how to spell Worcestershire.

    Skill level:

    Beginner

    Beef StroganoffIngredients:

    • 1 lb. ground beef
    • 2 cans of cream of mushroom soup
    • 10 oz sour cream
    • 24 oz bags of egg noodles
    • 1 tablespoon Worcestershire  sauce

    Directions:

    Get a large pot of water boiling. Once boiling, add the noodles and cook as directed.

    Cook the ground beef over medium heat until browned. Drain grease (I didn’t, and it was really nasty). Add the cans of soup, Worcestershire, and 1 can of water (about 1 cup). Heat through.

    Stir in the sour cream and turn off heat.

    Serve stroganoff over noodles, and with a side of any green vegetable of your choosing. (Ignore the lack of vegetables in the picture!)
